Want unusual winged peppers with a crisp, mostly sweet bite? Mad Hatter grows flat, hat-like fruit that changes from green to red. In hot, dry weather, flesh near the seed cavity can develop some heat, while the wings stay sweet.

Ready to grow Mad Hatter? Follow our Pepper and Chilli Grow Guide for warm sowing, sturdy support, regional timing and harvest care.

Quick Grow Facts

  • Crop: Mad Hatter, a mildly hot Capsicum baccatum pepper with sweet fruit wings.
  • Growth form: Large, vigorous, upright plant; breeder guidance gives about 91–122 cm height. Grow in-ground with stakes or a cage.
  • Sow: Start about 6 mm deep in protected, free-draining mix; keep it warm, around 27–32 °C for general pepper propagation, and evenly moist.
  • Plant out: Harden off and transplant into sun after frost risk passes and nights warm.
  • Space: Allow about 60–90 cm between supported plants.
  • Harvest: Snip crisp fruit green or let it turn red for fuller sweetness; taste near the centre cautiously.

Provide fertile, well-drained soil and steady water during fruiting. Wash fruit before eating fresh, pickling or stuffing; wash hands after cutting if the centre has heat. Sowing seed is for planting, not eating or sprouting.
