Violet de Provence is a large cool-season globe artichoke grown for tapered violet-and-green edible buds. Harvest the young, tightly closed heads before the bracts spread; colour and exact form can vary in seed-grown plants. Maintain healthy crowns for another season where drainage and climate are suitable.

Quick Grow Facts
-
Plant type: Cool-season perennial vegetable; annual or biennial treatment is practical where frost, heat or wet soil prevents reliable crowns
-
Scientific name: Cynara cardunculus Scolymus Group (widely listed as Cynara scolymus)
-
Variety: Violet de Provence
-
Seed form: Raw seed; seed form does not establish untreated or food-grade status
-
Regional sowing season: Use the linked regional guide to place the crop into a safe cool establishment window
-
Position: Full sun in cool weather; protect establishing plants from severe dry heat and wind
-
Sow depth: About 2 cm in an individual pot or deep cell; cover the seed and give bright light immediately after emergence
-
Germination light: Cover the seed; give bright light immediately after emergence
-
Germination temperature: Around 21–24°C for the shared warm pot-sowing method
-
Germination: Check emergence regularly and maintain stable moisture; home timing varies with conditions
-
Transplant: When well rooted and large enough to handle; protected production commonly takes about two to three months. Harden gradually and do not bury the crown
-
Chilling for buds: Established seedlings or crowns need suitable cool exposure for bud initiation; response varies by cultivar and conditions, and a short chilling recipe does not guarantee first-season buds
-
Spacing: 1 m minimum; allow about 1.2 m for permanent plants where space permits
-
Height and spread: Commonly about 1–1.5 m high and wide under good conditions
-
Harvest: Harvest enlarged buds while they remain firm and tightly closed; establishment and climate affect harvest timing
-
Bud outcome: Expect tapered violet-and-green buds, harvested young and tight. Seed-grown head size, colouring and first-year yield can vary.
Sowing and Care
Sow about 2 cm deep in a warm seed zone around 21–24°C in a deep cell or 8–10 cm pot of clean, free-draining seedling mix; do not surface-sow. Keep it evenly moist but never saturated and provide bright light from emergence. Move well-rooted plants before roots coil, hardening them gradually first.
Cool exposure supports bud initiation, but first-season buds are not guaranteed; seed refrigeration is not a universal substitute for suitable plant development and climate. Plant into deep, compost-enriched, well-drained soil at least 1 m apart. Keep water steady through bud formation, feed moderately during active growth, and keep wet mulch away from the crown.
Harvest
Cut the primary bud first while the bracts are tight, leaving about 7.5–10 cm of stem. Pick smaller side buds as they size up. Open flowers are beautiful, but the bud becomes fibrous and past eating quality once the scales spread.
Safety
Never eat the seed or use it for sprouting. Use only controls currently labelled in South Africa for edible artichoke and observe all withholding periods.
